Omg Yum!

  • I took my mom's turkey carcass LOADED with meat home last night and it's bubbling away on the stove RIGHT NOW. Oh my goodness is the smell just heavenly heavenly heavenly. I always make my own stock but I thought you guys might enjoy my Easter Turkey Soup recipe!

    4 cups chopped turkey (white and dark meat)
    2 cups baby carrots
    1.5 cups each cauliflower and broccoli
    1/4 cup red onion
    10 cloves garlic
    3 medium stalks celery
    1 cup sugar snap peas
    8 cups turkey stock

    fresh pepper, bay leaf and sage to taste

    I chuck mine in the crockpot for 8 hours and we're good to go by dinner!

    Calorie content: (I was conservative and said the pot would make 12 cups)

    You should seriously SMELL my kitchen right now. AND I've budgeted 3 cups for dinner with a slice of orrowheat bread and 2 tsp butter! I'm looking forward to it already
  • Kind of wishing I'd snagged the carcass from my mom's, now. Sounds wonderful. I do have a couple of whole chickens in the freezer, maybe I'll try it with one of them later in the week. Thanks for recipe!

  • I just love turkey soup! In my family, my sister and I nearly came to blows over who got the carcass or the ham bone for that matter. My Mother would just smile and expect some of the soup within a day or two.

    speaking of recipes-i have one for a strawberry dessert that is AWESOME to go along with the soup.

    1 packet jello sugar free strawberry jello
    1 packet jello fat free instant vanilla pudding
    1 bag frozen strawberries
    1 fat free angel food cake
    1 tub fat free whipped topping (cool whip)

    what you do is cut the angel food cake into 1 inch squares, place in a baking dish. Prepare the jello and pudding according to directions. Pour the jello mixture over the cake. Add the strawberries throughout (you can use fresh if you like). Next spread the pudding on top of everything. Then spread the cool whip and refridgerate for a few hrs

  • OMG, the way you guys say carcass just freaks me out! I know thats what it is but what a way to put it....hee hee. I bet its tasty though, I remember making soup from the leftovers when I used to eat meat.
  • I just put the whole think into a recipe calorie counter so I have no idea how much JUST the stock is.

    That dessert sounds yummy. I don't eat dessert type items (it's a slippery slope for me) but my kids would love it!
  • Yum, I LOVE turkey carcass soup! We had a ham for Easter dinner, so I have the hambone simmering on the stove with onions, celery, carrots, bay leaves and water/chicken stock right now for split pea soup tonight!

  • My turkey soup is Very similar, I also add cubes of sweet potato and put chopped spinach in my bowl before I add the soup! YUMMERS
  • Mmmm..don't have a turkey carcass but we do chicken soup a couple of times a month...my daughters call it "bone soup." Hehehehe.
