7 Layer Dip- Phase 1

  • Take 1 can of fat free refried beans, mix in garlic and cumin. Spread in bottom of your dish. The perfect container for this, and also awesome to go, are those 4 cup flat rectangular tupperware things. Then add 3-4 oz (half a small container or a little less than 1/2 cup) plain nonfat yogurt ("sour cream") and spread on top of beans. Top with any/all of the following:

    drained Rotel
    tomatoes
    tomatillos
    green onions
    regular onions
    cilantro
    bell peppers
    jalapenos
    etc.

    YUM!! So fresh and delicious. You have to eat it with a spoon instead of chips but it is really good and hits the spot if you want Mexican food!
  • You could also take this and roll it into some lettuce like a wrap. That way you can still kind of get a "crunch effect
