Spaghetti Squash

  • I was curious.Is spaghetti squash allowed.If so how much is a serving.I like using it with my homemade spaghetti sauce.But I want to make sure it is on plan.My sauce has tomatoes bell peppers,onions and some low sodium tomato sauce in it with a bunch of spices.
  • Yes it is allowed. I think half a cup cooked is a serving of veggies. It would be the same as zuchini. I use some low fat ground turkey and the spaghetti squash and it makes a really surprisingly good low calorie spaghetti.

    I cut it in half length wise.This is very tough to do.So be careful.Then I rub the inside with just a little EVOO and rub some garlic and italian spices onit like basil and oregano.Then i bake it in a 375* oven for about 1 hour.Then while it is hot use a fork to scrape it out like noodles.It is one of my favorites.

  • I cut mine in half, scrape out the seeds and them place face down in a casserole dish. I poke the top a few times, add a tbsp of water, cover with saran wrap and microwave 7-9 minutes.

    To make cutting easier sometimes I will just poke a few holes and nuke it whole for 2 minutes.

    Serving size of 1 cup is only 42 calories. Half of my 8 inch squash was only about 120 calories and it was way to much for my lunch.
  • I love spaghetti squash! My mom just pokes holes in it and puts it in the microwave for 20 minutes. After that, it is soft enough to cut it half easily. Then I pick out the seeds and put homemade spaghetti meat sauce on it. You really only taste the sauce but it's an easy way to get veggies in and avoid starch.

    Can anyone tell me what is the size of a serving. I am going to start a drop squence plan. I can have 3 veggies, 2 fruits, 2 starches, etc. Is there a list that I know how much one starch is and what a starch consists of. Thanks in advance for your help

  • I believe that you should be able to count this as a veggie serving - but acorn or butternet squash would count as starches.
