Dinner idea -- VERY easy!

  • I made this on Sunday, but am really reveling tonight at how good it is.
    • teriyaki chicken breast
    • quinoa
    • swiss chard

    Dessert: a small (I mean very small square of organic 85% dark chocolate.

    I marinated some chicken breasts overnight in Teriyaki sauce, and then baked them in the oven the next day.

    The quinoa is a new find -- cooked up a batch, it's like couscous only better.

    Swiss chard - wow! I love it soooo much. It's like spinach but less bitter. I just steamed it.

  • I love quinoa (apprently pronounced "keen-wah")! I need to start putting it in everything again. It is SO healthy for you, and it cooks 5 times faster than brown rice. Crunchy, nutty, delicious!
