BWaaahaaahaaa -- Getting the kids to eat beets and tofu

  • I was feeling devious last night so decided to see if I could get the family to eat some of the stuff I love to eat but they turn their noses up at. So... I made a chocolate cake, ingredients included beets, with a silken tofu-banana-peanut butter topping. They devoured it....

  • As for beets, have you ever tried a raw beet salad? It is soooo good. I love raw beets, cooked beets are ok but raw beets are out of this world.
  • Oh yes, I love raw beets. I cut up raw beets a lot of my daily salads and bring raw beet salad to picnics in the summer (I use a Moosewood recipe) -- the color is beautiful and the taste divine. Sadly, I think a lot of people avoid beets because they get the bad rap of being a starchy carb. I also enjoy beet greens are also great in salads and cooked with other greens.
