Hey does anyone have a homemade healthy recipe for granola bars? Right now I buy the Curves Peanut Chocolate Chips ones at 2.99 for 7. They're one point each and soo delicious..however I LOVE baking and would love to come up with something at home.
I just improvised and made a 'trial' mini batch of rice krispie cookies but instead used bran flakes. I LOVE rice krispie cookies but they're honestly just empty calories. I used a little over a cup of marshmallows, 2 tsp of low cal. margarine..teeny bit of vanilla and 1.5 cups of branflakes. The calories totaled 300, 4.75 grms of fat (marg and cereal) and 7.75 gms of fibre. Out of this mini batch I made 4 cookies/granola type thingies..lol. They equal out to be 1 pt each. I coulda made them smaller but figured 4 was an easy number to stick to.
The verdict...tasted pretty similar to normal rice krispie cookies...EXTREMELY chewy..lol...boyfriend suggested next time use a food processor and make the cereal really fine...and leave a little in their normal shape.
