What do you do....

  • when your DH is so picky about vegetables? I love making soups, casseroles, stir frys, etc with vegetables in them and this is how I prefer to eat veggies as opposed to just on the side. But, he is so picky and won't touch something if it has veggies (besides green beans or corn) in it. So, I just don't really eat many vegetables because of this. It just seems dumb to make 2 of everything, one with and one without.
  • I buy frozen veggies and steam or microwave single servings for side dishes. I still make the veggie soups, but I put them in single serving tupperware and bring to work for lunch or eat on nights when he is out for dinner. Stir frys I'll cook without veggies then plate his and add my veggies. You could probably make a stir fry and freeze portions to eat at meals when he isn't around.

  • I made a statement and converted to vegetarian... lol! So, he eats his meals, I eat mine... IF we share a meal, it's typically a salad (his with Caesar dressing, mine with a vinaigrette!)

    I'm willing to make two meals, since it's just the two of us, but it's the only way (besides other reasons to converting!) I could get veggies into my diet...
  • Try obscuring the vegetables in the soup by puree-ing them with an imersion blender and include peas to get the right colour and taste and then . . . lie your head off . . . "what, there's nothing in here but peas and corn, dear"
  • i like having veggies in the fridge cut up easy to grab and make a great low fat dip or i have salad stuff, liiving alone i do all this for one and works great , make my own salad dressing as well , keep it interesting or i dont eat the veggies anymore
  • I have some picky kids ...a few things I do is puree them and add them to sauces..or chop them really small...mushrooms, spinach..and such..so they are more like a spice...it gives the sauce great flavor and only I know..bahh haa haa...you can also use the puree in meat loaf and breads like carrot bread, zucchini bread...you just kinda have to get inventive on them...that or sometimes I just put the veggies in and let them eat around them.....they are always welcome to cook something for themselves if they don't like it...and there is always PBJ..
