You might look into Ezekiel breads. I'm not sure whether they're gluten-free, but they don't have flour--they use sprouted grains. They're delicious

and P2-safe.
However, most of the gluten-free things I've found are made with flours of other kinds, such as rice (usually white), which are not SBD-safe. Furthermore, they are
very expensive compared to traditional foods. Unless you have a problem with gluten, I wouldn't think they'd be very useful.
