Im proud of myself...

  • I wanted Mexican food so bad. I am alone (family is out of town) and I didn't feel like cooking so I thought I would get take-out. Well I sat down at my computer and I just couldn't being myself to get up and go get it. Not because I was being lazy but because a voice in the back of my mind was telling me no. Go eat something healthy.

    I got up and got a bowl of Special K. Now I know that isn't the best choice but it isn't the Mexican feast I had been planning in my head.

  • Great job, those little victories are hard one but so worth it. DH and I went out for lunch today at a viet. resturant so I ordered the seafood soup instead of the stir fry and rice. Then I only could eat 1/2 of the broth and noodles. So like you I wanted to share too

  • WTG Nancy! I believe in celebrating the little victories as well as the big. I have done really well tonight so Im proud. Instead of a huge meal i have had 2 small healthy ones. I feel so good

    I just bypassed all the muffins that were screaming at me in the supermarket and made myself a muffin-like concoction in the microwave, using quinoa flakes, egg whites, pumpkin puree and a TBS of heavenly pumpkin butter, topped with just a bit of Greek yogurt. And it took like 5 minutes altogether, and it tastes awesome. Take that, commercially made baked goods!

    Sure! Although it's not much of a recipe, and today I actually made an improved version that I'm much happier with, so here goes:

  • Ok, please do tell me what's pumpkin butter? I have never heard of it (but then, I also don't know what Greek yogurt is - never seen either in Canadian grocery stores).
  • Yah, until last week, I didn't know about the existence of pumpkin butter, either - enter Trader Joe's . I guess it's like a jam or maybe (in consistency) like a lemon curd. You find it with the jams and preserves. Ingredient list says "pumpkin, sugar, honey, lemon juice concentrate, spices.

    As for Greek yogurt - you're originally a fellow European if I remember correctly? So it's basically like the style of plain yogurt you would get in Germany or France or, as it were, Greece . A bit more creamy than the regular stuff over here, a bit more tart, some brands like Fage even veer towards sour cream territory, which I don't care for that much. I favor the Trader Joe's European style or Greek style, but of course that does you little good in Canada...

    ETA: Another brand that is pretty similar is Wallaby, which I absolutely adore but can only afford when it's on sale. Yet another brand I remember seeing in stores is Oikos, but I've never bought it.
