Forgive me for I know not what I do..

  • Morning Ladies.. I am a long time lurker, sometime poster.. I am just not sure where to put this. Yesterday my boss sends me this email with a recipe for chocolate mug cake..it looks soooo good.. but not really south beach friendly.
    the recipe goes as follows
    4 Tb flour
    4 Tb sugar
    2 Tb cocoa powder
    3 Tb choc chips
    1 egg
    3 Tb milk
    3 Tb oil
    splash of vanilla
    mix the dry together, then add the rest.. Spray Pam inside a large coffee mug put in the microwave high for 3 mins let cool and enjoy
    Now I really wanted to try this so I played with the ingredients for awhile to see if I could get it to taste good and still be able to eat it in Phase 2..
    well tip one.. you cant bake with olive oil...lol I am sure many of you know this. I used whole wheat flour, skim milk, splenda and omitted the chips ( and tried olive oil lol) not too crazy about it..but...BUT.. I do think I found a way to make my cake and eat it too..
    5Tb whole wheat flour
    Splenda to sweeten
    1 egg and one very ripe banana and splash of vanilla
    Microwave for 3:30 mins
    let cool
    I will try again to work on the chocolate one and see if I can add
  • I've baked with extra light olive oil with no problems...extra virgin is not so great though.

    For the chocolate, you could add unsweetened cocoa powder.

    I like the idea of adding a banana instead of oil. I've always substituted applesauce. Yogurt would work as well - vanilla or another sugar free flavor.
