Blended Salad and hey, I'm back :)

  • OK, so I used to do Dr. Ornish's ultra low fat diet. Lost a lot of weight, 70 pounds. I got my cholesterol down, felt great. Relapsed into the pit of the Standard American Diet, appropriately SAD for short.

    A couple weeks ago I even went worse and went low carb high protein. Meat in my diet does very bad things to my cholesterol, thanks to my heredity. I got it checked last Friday and it went up 40 points, and worse yet my inflammation markers are high. So I am willingly and happily back on a vegetarian diet. For now the plan is Vegan. I may slide to Lacto-Ovo for special occasions, but I am not going head first into the SAD diet again. I am just lucky my husband will do whatever diet I do!

    So today I had my first blended salad, but I winged it. It was Romaine lettuce, a peach, some vanilla soy milk and carrots. Sounds gross, I know, but it is what I had on hand. LOL

    So what makes a delicious blended salad? I am going to have to get some greens that way, I can only eat so much dry salad and I find it very convenient.

    Is there a good recipe spot? Any ideas on how to make a yummy sweet one but still use alot of greens? I would love to find a way to sneak broccoli or something similar in. I hate Broccoli but it is so good for you, If I could find a way to bury the taste. LOL

  • I know this is an old thread but thought i would throw in my favorite green smoothie recipe.

    Currently my favorite is a "Spinach Almond Joy"

    1 cup vanilla almond milk or plan almond milk sweetened with a date or stevia
    6 to 9 oz of spinach (I started out slowly and built up to this)
    1 banana (frozen)
    1 cup frozen unsweetened blueberries
    1/4 cup dried unsweetened coconut
    cocoa to taste (I used now cocoa about 3tbsp. It has 55 calories in a 1/4 cup and 6.5 grams of fiber.)
    1 tbsp of flax seeds (I don't always put this in put I am trying to be better about getting in EFA since I am pregnant.)

    The coconut really hides the taste of the spinach so you would probably not taste a small amount of broccoli in it.
  • Thanks for that, it sounds yummy! I might cut the fat by leaving out the coconut and putting in a dash of extract in its place. Yum!
