I'm joining a CSA-what about beets?

  • I don't remember off hand if beets are a SBD friendly food or not. I've heard people talking about receiving a lot of beets from their CSA share (community based agriculture)

    And what do you do with them? I've only ever seen them canned - or pickeled-double yuck.

  • beets are considered high on the GI which means they are a limited food in phases 2 and 3. i only buy them canned for DH and girl child.
  • Fresh beets roasted in the oven with a little bit of balsamic vinegar are awesome. So naturally sweet! Especially the candy stripes and golden.
  • They are also good shredded on salads and the GI is better when raw (like carrots)
