Big Fat Breakfast Cookie

  • I found this cookie recipe over on the Fabulous Food Find Forum and thought some of you might be interested. Of course, I had to do my own thing. NO FLOUR!! YIPPEE. Only other change think I might use a little more splenda next time. I made this into about a 2 x 3 cookie and cut it into fours. One piece was quite filling and would go good with Fage yogurt. Don't know the carb or sugar count on this, but does have some protein with the milk. NO FATS!!!

    Big Fat Breakfast Cookie
    1/3 cup oatmeal
    1 tablespoon raisins (I subbed in unsweetened cranberries)
    1 tablespoon flour ( subbed in 1 tbsp of flax meal)
    1/3 cup non-fat powdered milk
    1/4 cup applesauce
    1/4 teaspoon cinnamon
    1/4 teaspoon baking powder
    1 tablespoon Splenda granular

    1. Preheat oven to 350.
    2. Spray cookie sheet with baking spray.
    3. Mix all ingredients together.
    4. Spoon 1 large mound on the baking sheet.
    5. Bake 15-20 minutes.

    I don't know the calorie count. I'm getting on my Sherlock Holmes hat and will get back with you. If anyone else can help, HELP!!!

    I found all the ingredients using the raisins and the flax meal and came up with about 271 cal. per bar with about 43.5 carbs. I used the information in the "Food Counter" by Dr. Natow and Heslin, R.D. Craisins are about 25 cal. per tablespoon and about 6.5 carbs per tablespoon. They are pretty close in nutritional info as the raisins. I figure protein is around 14 or 15. All of this is approximate. So nice to be able to do something that doesn't have flour. Wonder what would happen if you subbed in soy flour for the regular flour? Still doing that crazy 1 minute Flaxmeal muffin. My DH said that he would like this with coffee. I'm still leaning toward the Fage. Enjoy!
  • Interesting. I don't know anything about cooking with soy flour but hey... try it and see. One day I'll have to give this a go.

    Is there any other dried fruit with less calories that might work? apricots?
