Veggie Soup

  • Hi Everyone...has anyone on this board made the WW veggie soup? I usually make a double batch, and store them in one-cup containers in the freezer...perfect to take to work either for lunch or a snack. No Points!! Sometimes I add kidney beans for a little protein boost, but it is just as good without them.

  • Most of us oldtimers make it every few days. Mine doesn't stay around long enough to freeze. LOL! DH and I both take it daily for lunch. I toss in a few broccoli flowerettes. Occasionally I will put in those 1/2 ear of corn on the cobs (1 point each) too.
  • Are you kidding I make it all the time. It's a life saver. I call mine one point soup. I start with lots of broth, beef or chicken and two cans of V8 juice. I chop up tons of fresh vegetables, one can corn, one can beans, drained and one red potato. I add herbs, salt and pepper, garlic and onion. I have made it this way a lot and measured it out, counted all the points and it always turns out to one point per cup or less. Frozen chopped spinich and a handful of pasta is good in it two. Keeps in tupperware for over a week in the fridge. It's a lot more filling then the 0 point WW soup.
