Onion pita

  • I picked up the wrong bag of pitas *sigh* So now I have onion pitas, never tried them but want some low calorie ideas. We just used the rest of the shredded cheese so pizza is out. Any ideas?
  • Slice it in half to create the "pocket" and stuff the bejeezus out of it with romaine lettuce, grilled chicken breast (cut into bite size pieces), finely-minced scallions, thin strips of red peppers, and toss the whole thing with Good Seasons Italian Dressing (made with olive oil) and there you have it.

    Or stuff it with heated black bean soup from Progresso and top with feta cheese. You've got some good stuff to work with there.
  • Grilled Pita - Toast/Grill them with some olive oil brushed on w/ garlic powder and seasonings.. You can use them as a cracker for dip or w/ dinner.
  • I'll bet they'd be good cut into wedges and dipped in hummus.

  • oh ok well i cut it in to 4 and stuffed it with seasoned tomatoes and MAN would they be good dipped in ranch dressing BUT... I have to find something else to dip them in. lol

    Usually some of the other things in hummus are lemon juice, tahini, etc.

    Hummus - a couple cans of garbanzo beans (I drain and rinse them), minced garlic (depending on your tolerance level, anywhere from 1 clove to 4-6 - hot stuff), pureed in the food processor - add a couple tablespoons lemon juice, whir it some more, (it'll be dry and chunky) - while the machine is running, add 1/3 cup water (slowly), and a teaspoon (or more - taste) of toasted sesame oil (or, a tablespoon or so of tahini). Grind in a bit of pepper, and add a bit more water while the machine is running. Taste it and adjust the seasonings (add a bit of salt, pepper, more oil or more lemon juice). I use the sesame oil, 'cause a little goes a loooong way. Oh, and if you prefer a milder garlic flavor, use roasted garlic instead of raw.

    Tzatziki - basically a mixture of minced cucumber (peeled, or not), crushed/minced garlic, unsweetened/lo/no-fat yogurt, lemon juice, fresh chopped mint and oregano, a pinch of S & P, with a wee bit of extra-virgin olive oil swirled in. Excellent over grilled meat of any kind ! (Or eaten with a spoon - a guilty pleasure) - I don't use measurements typically, but if needed, there are recipes on line.

    And, yes, we have an issue with garlic breath here - but not with vampires!
  • tzatziki is usually fairly low in cals. 20cals per 2tbs or so. Hummus yumm. Judipurple- you make me want to but a food preocessor just to make hummus. i love it but never really thought about making it. I but the garlic kind from the mediteranian (sp) deli around here and still usually add my own garlic and eat it with onions and cukes
  • I don't use water in my hummus. Olive oil only and lots of garlic. I also throw in fresh cilantro because nothing beats fresh cilantro. I throw it in salads, on fish, you name it. But hummus is great with cheese and a good Merlot.
  • Most grocery stores sell hummus these days, if you don't want to make it yourself. Look in the refrigerated section.

    You could use the pita's for lots of types of sandwiches. They would be great with some salmon, cream cheese, green onions, and tomatoes.

  • Well, DH bought cheese yesterday and we had the pitas with canned tomatoes and cheese... DH actually asked me to go buy more so I went out and bought more for us
    OH AND GUESS WHO IS CALORIE COUNTING??? MY HUSBAND!!! He went from 207, 2 weeks again to 201 as of this morning
