Help-need recipe for chicken salad

  • Hey guys! Hope everyone is well. I am dying for some chicken salad and was wondering if anyone had a good recipe with decent WW points.

  • I made a really good chicken melt on a carb check bagel tonight...

    3 oz pouch of chicken - 90 calories
    1/2 cup chopped celery
    1/4 cup diced pickles
    1 1/2 tsp dijonnaise- 7 calories
    1 tbs mustard
    about 1 tbs miracle whip - 10 calories
    dash of pepper
    1 tsp franks red hot sauce
    1 tsp Vivi's Original Carnival mustard- about 5 calories
    add additional veggies such as onions or coleslaw mix (carrots, purple onion)
    Mix and add ingredients depending on consistency and taste

    I preheated the oven to 375 and toasted the bagel. Then I added a few sprays of I can't believe it's not butter spray and put a slice of kraft FF american cheese on one side of the bagel. add the chicken salad to the other and bake for about 7 minutes or until cheese is melted and salad is golden on top. Then I added tomato and lettuce and more condiments as needed! SOO YUMMY and low cal!

    You can use any type of bread (tortilla, bun etc)...crackers would be good with it too!
  • I love chicken salad, too. I'm sure making it at home is better than buying it someplace.

    I'm not sure how the points would add up here...

    A friend of mine makes it with a few sprinkles of Hidden Valley Ranch powder mixed in with the mayo. That dip mix has about 5 calories per serving, and is strong enough that you'll only need a tiny bit for something like chicken salad.

    I've fallen in love with Hellmann's Canola Mayo, which has all the flavor (to me) of regular Hellmann's, but a fraction of the fat. I think one tsp. is one point. Not bad for when I make a sandwich and only use 2 tsps, but not sure how much would be needed for a single serving of chicken salad. I wonder if it could be stretched even further with plain, ff yogurt.

    I may have some recipes in my South Beach cookbook. One thing about SB is that the recipes are delicious!! And most work out to be 8 pts. or less...I actually went through and figured out the points for all of them!

  • The last few years, I've gotten hooked on fruit in my chicken salad. Grapes, raisins, or even today... apples.

  • Chicken, celery, onions, pickle relish, celery seed etc. These are not the things that are going to add up the points, although you will want to measure how much chicken you're using.
    The real critical ingredient is going to be what you use to bind the salad together - primarily the type of mayonnaise you use. Make sure you know the points for this and measure it out. You should be able to use your favorite recipe and make it with the mayonnaise you're now using.
  • From Weight Watchers Perfectly Simple.

    Chicken Salad
    6 servings (2/3 C.)
    3 points.

    3/4 pound cooked chicken breast, cut into bite-sized pieces
    1/2 C. celery, finely diced
    1/3 C. dill pickles, or sweet gherkins, finely diced
    1/4 C. reduced-calorie mayonnaise
    2 Tbsp. reduced-fat sour cream
    2 Tbsp. parsley, fresh, chopped
    1 tsp. Dijon mustard
    1 tsp. fresh lemon juice
    1/2 tsp. table salt
    1/4 tsp. black pepper, freshly ground

    Place all ingredients in a large bowl; mix until blended. Yields about 2/3 cup per serving.

    NOTE: For a Waldorf-like chicken salad, stir in 1/3 c. of diced apples and 2 Tbsp. of chopped walnuts (will affect POINTS values).

  • Another Chicken salad idea
    I've been on/off WW for years - but I'm back ON!!
    One of the recipes from way back was so easy & low points:
    Chicken (or tuna)
    Crushed pineapple
    and slivered almonds (toasted is best!)
    I usually have with 1/2 pita pocket..

    Points are easy to figure - I just haven't lately... sorry!
