Bell Pepper Salad with Lemon Vinagrette

  • In Phase 2, we turn this into a sandwich with whole wheat pitas & hummus spread. In Phase 1, it's a refreshing side dish:

    Lemon Vinaigrette
    2-1/2 teaspoons lemon juice
    1/2 teaspoon lemon peel, grated
    1 teaspoon sherry vinegar
    1 small clove garlic, minced or pressed
    large pinch cayenne pepper
    3 tablespoons olive oil

    Mix together all but olive oil. Whisk in olive oil. Toss with Bell Pepper Salad.

    Bell Pepper Salad
    1/2 small red onion, thinly sliced
    1/4 small bell pepper (any color), seeded and thinly sliced
    1 small cucumber, peeled, seeded, and diced
    2 1/2 oz feta cheese, crumbled
    small can sliced black olives or Kalamata olives, pitted and chopped
    salt & pepper (to taste)

    Toss with Lemon Vinaigrette. (2 servings)
