Wine Garlic Asparagus

  • My MIL, FIL, BIL and soon to be SIL came over for New Years dinner today.

    I knew that SIL was a vegetarian so I tried a new recipe I found online. It was VERY nice!! The only problem was that I used frozen Asparagus instead of fresh (I won't make that accident again).

    1 lb asparagus
    1 tbsp olive oil (or butter)
    1 tbsp minced garlic
    1/4 cup red wine
    1/4 cup rasins (yes raisins)

    In a skillet, heat oil - stir in garlic until fragrant. Add asparagus, toss with oil and garlic and cover. Let cook on medium heat until tender crisp (4 - 5 minutes).

    Add wine and rasins... stir then simmer until red wine evaporates.

    So good! Who knew rasins and garlic would taste so good together?

  • sounds good except the rasins LOL i hate rasins. Asparagus is one of the easiest things to make. I usually just drizzle a little olive oil, sea salt and pepper and cook in over for 5-10 min until done. I love asparagus...could eat it every day

    Definitely something to try! Never actually cooked asparagus but I do enjoy it a lot.
