    My DD is fixing the feast this year (she has a dishwasher, YEAH) and this will be the first day of my soft diet!!!

    I'm planning on having a piece of dark turkey with gravy, a bite of steamed green beans with garlic and lemon sauce and an itty-bitty bite of turkey dressing

    My new grandbaby will be there and she is now three months old and I haven't seen her for a month. So I'm going to hold and cuddle her until they have to tear her out of my arms!!! LOL!!!


  • Here's what's going on with me - the alzheimer's mom and i will join my sister and her brood for a T-day lunch at the Cracker Barrel.

    and for dinner, i think i'm going to actually COOK, and here's what i have planned
    • cornish hen - and canned cran-raspberry sauce on the side. hmmm. maybe i'll cook the bird in it, too!
    • asparagus [sprinkled with romano and either bacon or prosciutto]
    • acorn squash
    • stuffed mushrooms [stuffed with goat cheese and bacon]
    • apple crisp with ice cream for mom

    didja notice the extra <ahem> protein i'm sneaking into the menu!!!???? LOL!!!!

  • it's about 6 hours from the PA border - dinner at 6:30!
  • everything sounds so good!! But think iim gonna stick to my homemade chili and melted cheese. I know that will sit good! Of course my protein drinks and carbmaster yogurts... Snows getting deep so might not be able to get to store but if possible id like to get some cottage cheese and try some sf jello with it for a treat.. Im not able to tolerate a whole lot of meats yet.. tried fish and it didnt set good yet. vienna sausages worked for awhile and now they dont! Lately everyday is different but interesting.
    FOr entertainment the Packers are playing!! Hope everyone will have a safe and blessed thanksgiving.... linda
  • jif, what kind of mushrooms are you stuffing? ive never tried that before, sounds pretty good!! All the meals sound good and healthy. When you and others started cooking healthy what were some of the websites you felt helped to transfer you into a new lifestyle way of cooking?
  • Thanksgiving in South Dakota
    Hi all,

    My Thanksgiving plans are going to be a little crazy. My hubby & I are leaving Indy on Wed. a.m. & heading for SD. We will have dinner with my niece in Mpls, get to NE part of SD Thursday a.m. in time to help another niece cook Thanksgiving dinner (her 1st time). Visit with my brother & sister-in-law (who has cancer) for a couple days. Drive to NW part of SD on Sat. a.m. to visit Sister, Brother-in-law, Nieces, Nephews & family for a couple days. Start back home Sunday evening. Stay in Madison WI Monday night to see son, daughter & their significant others. Celebrate our 14th wedding anniversary & back home Tues. night. (Whew--about 2300 miles in a week)

    As far as eating--my cooler will be packed with deli meats, fruit, water & when we stop for food, I plan on salads, grilled shrimp or chicken. Thanksgiving dinner will be turkey, small amt. of mashed potatoes, stuffing w/ gravy, green beans--Pretty traditional. I'm taking my scale, protein mix, & protein bars along just in case. I have a plan & I'm sticking to it.

    The fun part of this trip will be that none of my family has seen me since I had the WLS. I am looking forward to their reactions. One of my nieces in NW SD had RNY on Jan. 30, so she has lost about 90 pounds and I am anxious to see her also. We talked on the phone a lot after she had it. She was 200 miles from her surgeon's office, so I ended up being her own personal support group. The only down side will be if we get caught in a blizzard, which is really possible for Northern SD this time of year (Lived there 40 years, so know that well).

    Everyone have a Happy Turkey Day. (Except the turkey, of course). Something for you all to think about--Isn't it ironic that the one thing that God gave the turkey to say is "Gobble, Gobble"?
  • We're doing Thanksgiving here with the inlaws
    so She's making a breast and dark meat for me stuffing potatoes and some sweet potato thing and cranberry relish
    I'm making hopefully a slimmed down Spinach gratin (it may or may not be slimmed down variable to who i can elbow out of my way at the grocery) a Pumpkin pie and maybe cranberry bread
    I'm goign to eat some dark meat the spinach stuff and I'm not sure what else yet
    Last year I wasnt getting a bad reaction to a lot of fat now I am No meal is worth a fat hangover!
    Hopefully My unjury comes before then!!
    "dinner" is at 1 so probably eggs or my new addiction Cottage cheese and Motts NSA berry apple sauce for breakkie
    I'm bringing my knitting so I stay away from the Apps

  • so much excitement here! and Loodie - one of these days, we GOTTA meet! my mom's a hoosier, and there are still quite a few of her family hanging around fort wayne. AND my BEST FRIEND [well, one of them!] is from south dakota! she's a kid - in fact, her mom and i are the same age! she and i met at support group - she had the bypass. she's now married, living in phoenix, and is PREGGERS. and freaking because her body is expanding.

    Now Carvin. i'm not quite sure how to answer your question. i'm a nice italian girl, whose teeny tiny grandma taught her how to cook. i've never figured out how to deep fry anything, and nowadays, i simply cook what i like! and i like VEGGIES.

    i guess you could say that i cook by FORMULA. as fat-free as possible, but still with some fat for flavor. and i drain the fat. soooo, when i roast veggies, i drizzle olive oil over them, and when they're done, i drain them on paper towels.

    and i make every effort to sneak protein in.

    soooo, having said that, here's what i'll do with the mushrooms.

    first, make sure you have the larger white mushrooms [no need to get portobellows - just something that's 1-2 inches across].

    remove the stems and chop them finely.
    take your toaster oven pan, cover it with foil, and put the caps on upside down. rub with a paper towel that you've poured a little olive oil onto. bake at 350 for about 10-15 minutes, turning once, until the caps are soft.

    in a small frypan, saute SLOWLY the chopped stems, a wee bit of finely chopped onion, maybe a tiny bit of garlic, or a finely chopped olive or some green or red pepper or roasted or sundried tomato. a sprinkling of salt and pepper.

    add some pork product or other - some crumbled cooked sausage or bacon, or finely chopped ham, or prosciutto. just enough for a bit of flavor- don't go nuts here. for 8 caps, i'd probably use about 1/2 link sausage or 2 slices of bacon

    take the mushroom caps out of the toaster oven and add any juices to the frying pan, including the juice in the caps.

    add some soft, mild, melty cheese - some choices: cream cheese [reg or lite], gruyere, chevre, fontina, munster, provolone, mozzarella. just enough to bind it all together. just for size, about 2 tbs cream cheese or 2 thin-ish slices of munster.

    you can put everything in the fridge now for assembly later. OR you can just go ahead and stuff the little caps, and bake until they're warmed through and the top is a little brown.

    did anyone notice that there's no bread crumbs in here?????? LOL!!!!!
  • oh. and the apple crisp = cut up apples tossed with cinnamon, nutmeg, cloves. put into dish. drizzled with dark molasses. baked. near the end, sprinkled with low-fat, low-sugar granola, and then baked again to let the granola toast a bit.

    VOILA!!!! and yes, i DO make this in the toaster oven!!!!
  • Another yummy thing Grind up some nuts Walnuts, pecans, for the topping and some kashi golean for the topping with some plain oatmeal
    or WW flake and fiber has a nice cinamon taste
  • oooh. LOVE that nuts idea!!! i'm gonna use it!
  • pecans will go really nice with the molasses or honey and cinamon they're also a bit sweeter so maybe less table sugar
  • don't use table sugar in the apple crisp - just the molasses!
