RockinRobin - acorn squash

  • It seems like a while back you posted your way of making acorn squash. Can you tell me again? I bought a couple today with you in mind!

  • I'm making a couple tonight. A regular acorn squash for my husband, and a pale yellow variety for myself. We just cut them in half, scoop out the "guts."
    In a baking dish, we put in about 1 inch of water, and turn the squash upside down and bake until soft at 375.

    Hubby adds brown sugar, and sometimes butter. I usually add nothing, or just the tiniest bit of butter.
  • Hi Tricia. Yup, Suzanne found it. Here it is.

    I cut it open, scoop out the seeds, place in a baking dish with a little water. I sprinkle it with a little splenda and lots and LOTS of cinnamon. I cover it and bake at 400 degrees til soft, maybe an hour. YUMMY. It's so healthy too. 83 calories per cup, a whopping 8 gms of fiber. It's got iron, calcium and vitamins A & C too. GREAT STUFF.

    Since the above post, I've discovered sugar free maple syrup. Sometimes I put that on as well. I sometimes also slice it in rings, instead of cutting it in half, and sprinkle the individual slices with the cinnamon and splenda.

    We love it so much around here, I bought 6 of them today.
