What do I do with a turban squash?

  • Last night, my husband and I bought 12lbs of various squash(es?) because in FL at Publix they are only $.79/lb and that's cheap! We bought a turban squash and we have absolutely NO idea what to do with it ...any suggestions?
  • You could bake it just as any winter sqiash. For something a little more special recipezaar.com has a stuffed turban squash recipe that sounds good.try googling turban squash recipes you will get lots of hits.
  • My mom makes YUMMY roasted turban squash!

It's super simple too. Just cut it in half, spray some non-stick cooking spray on the cut sides, salt and pepper it, add some herbs if you want, and put it cut side down on a sheet pan and roast for 50-60 minutes.

It's also good if you're going to do a beef or pork roast in a slow-cooker. They're a nice substitute for potatoes. Just chunk it up like you would a tater and throw in whatever other veggies you normally would, like carrots or onions or garlic.
  • Sara,

When you say slow cooker, do you have to cook the squash first, or just peel it, cube it up, and throw it in with the meat in the morning?

Also, when you cut it in half, do you cut the top from the bottom, or stand it up and cut down the middle?

I have no clue about winter squash - my parents never really eat it.
