My favorite dinner can be healthy

  • I thought that if we all put down some of the staple dinners and favorite meals in our homes and ways to cook or prepare them differently so they would be low fat/calorie we would end up having lots of great recipes we could all use and we won't have to feel like we're giving up some of the things we and our families love to eat.

    Here's my recipe:

    Low calorie enchiladas

    1 package of shredded low-fat cheese
    corn tortillas
    1 lb of ground turkey
    1 can of enchilada sauce
    1 onion, chopped
    Non-calorie cooking spray
    1 can refried beans

    Brown the ground turkey and onions adding the spices you like. Lay out the corn tortillas on a baking sheet. layer the tortillas with refried besn, the ground turkey, enchilada sauce and cheese. Bake @ 350 until cheese is melted.
    Top with lettuce, tomato and light sour cream.
    Enjoy without any guilt!!

    My family loved these, they are just as good as the higher calorie ones.
