I love mushrooms, simply love them. They are soo low in calories.
I use tons of them at a time in a stir fry. Sliced raw in a plain old salad. Sauteed with spinach. I make a great lemon mushroom chicken breast dish. I make a portabello/onion dish with spaghetti squash. I use them in soups. Omlettes. And that's just for starters.
