Corn?

  • Ok, I'm almost done with Phase I, so I'm prepping myself by reading up on Phase II. I noticed corn isn't on the Ok List. When is it ok to re-introduce corn to my diet and why was it forbidden in the first place? I never thought of corn as high in carbs or sugar.

  • Corn is very high in starch and sugars, and hence carbs. Think "high fructose corn syrup". It's also relatively devoid of vitamins and minerals, compared to other veggies.
