I eat a LOT of these. I throw them in stir-frys, I roast them, I put them on subs (subs made at home and I always get them on my Subway subs as well), throw them into my pitas, into scrambled egg whites, anywhere they'll fit. I also like cutting them in half lengthwise and filling the cup halves with goodies, such as other veggies, brown rice, cooked orzo, lentils, etc, and baking them in the oven. I buy all colors; green, red, orange and yellow. But my favorite is still the classic green.
