Here is my slimmed down version of stuffed peppers. I've been eating them leftover all week and I'm not tired of them yet, so I'm calling it a winner. I've always used ground beef, white rice, and eggs, so these are a lot lower calories and a lot less fat than "normal". My grandma used to use Worstershire sauce in a lot of things, but my mom doesn't like it, so I've never really cooked much with it. As I take the fat out of recipes using ground turkey or chicken, I find myself looking for some moisture to put back in. I've really become a fan of the stuff.
3 large bell peppers, cut in half and seeded
Mix:
1 pound ground turkey
1 cup cooked brown rice
1/2 onion chopped fine
2 cloves garlic, smashed
worstershire sauce to taste
Divide evenly between the peper halves. Top with sauce.
Sauce:
1 can tomato soup
1/4 cup brown sugar
worstershire sauce to taste
Bake covered at 350 degrees about 30 minutes. Uncover for another 10 minutes to thicken sauce.
I ran the recipe through calorie count and got 365 for three servings, so you get two halves. It's 3.2 grams of fat, but the sodium is high due to the worstershire. I think it was about 400 mgs when I figured I used four tablespoons.
