This Week's Healthiest Food - Tomatoes

    I grow my own tomatoes every year and do sooo many things with them. On sandwiches, salads, in my pitas, chopped up and put into scrambled egg whites, in soups and other main dishes and I also like stuffing them with tuna salad.

    I think some of these foods are being repeated again, but whatever! Tomatoes are one of my favorite things

    I also made a really yummy broiled stuffed tomato a couple of weeks ago, stuffed with orzo mixed with onion, the 'innards' of the tomato I hollowed out, shredded veggie (soy) cheese and a sprinkling of bread crumbs. Mixed it all up, stuffed it into the tomato and baked it in the oven for a while. It was yummy!

    What's your favorite way to eat tomatoes?
  • I grow thousands, too. Whatever we don't eat fresh, I can and use throughout the year. LOVE tomatoes!

    My favorite way to have them is simplicity itself: Sliced with a little salt and pepper, and torn fresh basil scattered over. A teaspoon of olive oil enhances but isn't necessary. I can eat this salad at every meal!

    I love grape tomatoes plain, I also love diced tomatoes mixed in with beans, I also love tomatoes in sandwiches and salads, oh I love tomatoes
  • I always LOVED tomato SAUCE, but hated, absolutely hated the actual tomato itself. I didn't like the texture or the seeds. I don't know the whole thing turned me off.

    But since I started this journey - I've grown (amazingly so) to really, REALLY like them. I'll never like them on a sandwich. Well, I don't actually eat sandwiches, but whatever.

    I use them in salads. Chopped very finely along with chopped onions and cucumbers. In a lemon juice dressing.

    I also make a great and easy salad. I thinly slice them and thinly slice red onions. I dress it with lots of vinegar, water, a dollop of oil, salt, pepper and oregano. Sometimes I add thinly sliced cucumbers as well. Absolutely DEVINE.

    I also broil them very often and place them on top of grilled chicken cutlets or fish.

    I'm pretty fond of grape tomatoes as well. They're great in salads and great just to pop in your mouth.

    Those who know me very well, like my family and close friends, are still shocked when they see me eating tomatoes. I in fact, still find it shocking.
  • Robin, I used to hate tomatoes but loved the sauce, too. I've learned to love them over the last year or two as well.

    I particularly love smoked tomatoes They add a nice touch to a lot of dishes.
  • My kid loves marinara sauce, but not tomatoes. It's kind of odd, now that I think of it, because he's one of these kids that generally turns up his nose at mixtures of food, even if he likes all the ingredients. I think it's the acid in raw tomatoes that he objects to.
