Oven Fried Chicken - Phase 2

  • I started FS on July 13th and weighed myself again yesterday. I'm down 12 lbs. Now that I'm in phase two I'm looking for new foods. I made this and it was good. Thought you might want to try.

    Chicken Strips
    Fat Free yoburt
    Corn Flakes

    Dip your chicken in the yogurt and rub off the excess. Roll the chicken in crushed corn flakes. Put on a pan that has been sprayed with olive oil (I use Pam Olive Oil Spray) Bake at 350 for 30 minutes.

    I weighed mine and got two strips as a serving.

  • I'm gonna try this for dinner tomorrow. I'll return and report.

    Since I'm in Phase III now, I decided to try this with whole wheat bread crumbs. I made the bread crumbs by lightly toasting 3 heels (suegras for you Spanish speakers) and then put them in my food processor. The bread crumbs looked great. I wish I had used 4 heels because I had to use regular bread crumbs for the last few pieces (don't worry they're for kids). They're in the oven now, I'll post the results.

    Ok, so maybe my post is getting annoying and/or long at this point. The chicken did turn out great, the kids ate some pieces with the whole wheat bread crumbs and didn't notice the difference. They also said they tasted like Jack in the Box chicken strips. Over all, they were a hit. Thanks for the great recipe!

  • This was very good. I mixed cumin in the yogurt and served with black beans and mango salsa. Very tasty!
