Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
1 cup Diet Mountain Dew -- or water (or a little less), * see tips
1/4 lime, with skin and seeds -- cut into chunks, * see tips
    1 package JELL-O sugar-free instant vanilla pudding
    mix -- (4 serving size)
    1 package JELL-O sugar-free lime gelatin -- (4 serving size)
2/3 cup nonfat dry milk powder -- Carnation
1 1/2 cups Yoplait plain fat-free yogurt -- (you may try less), * see tips
    1 cup Cool Whip Lite
1 (6 oz) Keebler Shortbread piecrust

"Even if you enjoyed a hearty meal, here's a perfect dessert to serve that's as frothy and light as it is lusciously fruity! I know it seems odd to toss the skin and seed of a lime into your blender, but they add so much intense citrusy goodness, you'll be delighted at the result."

    1. In a blender container, combine Diet Mountain Dew and lime chunks. Cover and process on BLEND for 60 seconds or until lime pieces almost disappear. Set aside. In a large bowl, combine dry pudding mix, dry gelatin, and dry milk powder. Add blended lime mixture and yogurt. Mix well using a wire whisk. Blend in 1/4 cup Cool Whip Lite. Spread pudding mixture into piecrust. Refrigerate for 5 minutes. Drop remaining Cool Whip Lite by tablespoons to form 8 mounds. Refrigerate for at least 30 minutes. Cut into 8 servings. Freezes Well.

    Diane's Tips *:
    1. Posted to the message boards at the Healthy Exchanges Website: Some of us who have made this pie had trouble with it setting up. Do a little, if you have this problem.
    2. Some had a bitter taste with the whole lime. Use a peeler, I would prefer a fine grater, and use the rind only, taking care not to use the white pith. Then add the inside flesh to the blender and process. (I didn't have a bitter taste)
    3. And if it doesn't set up, put it into dessert cups and enjoy. This will be a great summer pie recipe when those temperatures start climbing, I might even freeze it to enjoy that way.
    4. Try Diet 7up instead of the Diet Mountain Dew.

  • Creamy Pie
Hi everyone! I just wanted to share what I thinkis a great recipe. I found this on the back inside cover of the current WW Magazine. I made it for my family, everyone loved it, not just the WW followers! THis recipe makes 8 servings at only 3 points each!

    5-Minute Key Lime Pie

1 Ready Crust Reduced fat Graham cracker crust
1 pkg. (4 serving size) sugar-free lime jello
    1/4c boiling water
2 containers (6 oz) fat-free key lime yogurt
1 tub (8 oz) Fat-free whipped topping, thawed

    1. In a large, heat-resistant bowl, dissolve jello in boiling water. Stir in yogurt with wire whisk. Fold in whipped topping with wooden spoon.

    2. Spread in crust. Refrigerate overnight or at least 2 hours.

    3. Garnish as desired. Refrigerate leftovers.

This was great, I also tried making different flavors. Strawberry-Banana was terrific!
  • That sounds so good! I printed it and plan to make it soon. Thanks!
  • I've made that pie twice, and I love it.
  • I joined on Sept 1st also. Been an interesting day for me.
Belonged about 1yr ago and did real well.
Lost lots of weight, but got to a stand still and after a while went back to my old habits. Sooooo here I go again.

NOTES : I have tried lemon and orange flavors in this recipe. When I tried the orange, I drained a small can of mandarin oranges and decorated the top of the pie. Lime is fabulous.

Nutritional information is based on all information available to me at the time of publication. I now calculate points using the 2004 Weight Watchers information. Verify that your ingredients yield the same results. I usually choose to use light rather than nonfat products. Some items, such as cheddar, I use the normal product as noted, as my preference. Optional ingredients are not included in the calculation of calories or points.
  • 1 package sugar free Lime Jello
    1/4 cup boiling water
3 (6 oz each) containers of WW Key Lime Yogurt
8 oz fat free cool whip
1 reduced fat graham cracker crust

Dissolve jello in hot water, let cool to room temp
    Combine jello with yogurt
    Fold in Cool Whip
Pour into crust, refrigerate at least four hours.

I actually like to freeze it, and eat it almost totally frozen.
  • michruss,
do you know the points for this?
  • If the pie is cut into 8 pieces, three points a slice.
