I impulsively bought a giant bag of dried shiitake mushrooms at Cosco and don't know what to do with them. Anyone have any good recipes using this ingredient?
I love shiitakes! After hydrating them in boiling water for 30 mins or so I add them to all sorts of things. I add them to stir fries, soups (asian and non-asian), omlets, and I added them to chili once (it was good, but don't do it with crock pot chili~smells up the house.) You could add them to pasta too I imagine. I say just hydrate and use like you would other mushrooms in cooked recipes. I also like to throw a couple (not hydrated) into the pot when I'm making veggie broth, it comes out more "meaty."
I've used them in just about any recipe that calls for mushrooms after they are rehydrated. I like to do a stir fry with shiitakes, white mushrooms, zucchini, green onions and sweet red pepper slices. It's so good.
