This Week's Healthiest Food - Blueberries

  • Oh yeah agreed Yum. If you have a Trader Joe's near you, they have excellent deals on fresh blueberries. LOTS cheaper than even on sale blueberries at the grocery store. The only problem is I always want to make something with them, but end up eating them all before I can do so. I either top them with splenda or mix up some ff cream cheese and ff sour cream with splenda and a little vanilla to make a mock creme fraiche

    I normally eat them in my cereal, but I have a granita recipe that I want to try with blueberries.
  • I love love love blueberries! I usually put them on my cereal or in cottage cheese. I read an article recently in Cooks Illustrated (which is definitely NOT low-cal food ) about blueberry pancakes. Ignoring their pancake recipe, I did pick up the tip that if you don't want purplish-gray pancakes, you should drop the berries onto the batter after it's in the pan. That way the berries stay whole and the pancakes are more attractive (if any of you eat pancakes! Maybe your families do though.)
  • Mmm one of my favourite berries. Today I'm eating them plain for a mid-afternoon snack, but they just go so well with so many things... yummm.
  • Love um'. They're yummy. I usually eat them plain right out of the container or sometimes make a whole yummy fruit salad with them. Great, great stuff.

    Now of course in the olden days I had some really good things that I used to make using them. Incredible muffins, a scrumptious and really easy pie and a phenomenal, phenomenal cake with crumbs on top and oooh.... let me stop.

    I eat pancakes! I just substitute flax meal for the oil (3:1 ratio) and 1 heaping T of soy flour/1 T water for the egg (or I'll just use the egg whites.) I use whole wheat pastry flour instead of white. Granted I don't eat them all the time, but they are a nice treat every now and then.
  • Most of the blueberries I've ever had were very sour. I bought some frozen ones, but I haven't used them because I'm afraid I will just want to add a bunch of sugar to make them sweeter/more flavorful.
  • The only blueberries I've liked fresh are organics from France Farms. They were very expensive this year, I think about 5 dollars for a tiny box, but they were actually sweet and tasted like bluberries. Almost every other berry in the store was flavorless or tart. I'm pretty sure blueberry prices are jacked up because of all the recent hype about their medicinal qualities.
