looking for a recipe

  • I think I have seen it here but can't find it. I am looking for a cobbler recipe using fruit for the bottom and then mixing oatmeal, splenda, butter, vanilla, and egg white for the topping. You then bake it and it was so good but I can't find the recipe to make sure that this is correct. Anyone know?

  • Pre-Beach, when I would make a cobbler, I would mix the berries with a spoonful or so of flour (you could use whole wheat), cinnamon, and a little sugar (you could use sugar substitute) and then make a topping out of oatmeal, brown sugar, butter, cinnamon, and a little more flour. A cobbler is never something I measure for, but if I had to guess it might be a cup of oatmeal, half a cup of brown sugar (sub the SB "brown sugar"), a couple tablespoons of butter (sub SB friendly margerine), and a tablespoon or so of flour (sub whole wheat). I've never used egg white in mine. I'm not sure why you would.

  • I found this on the phase 2 dessert recipe board:
    Mix the following and place in a greased baking dish
    3 cups of any Phase 1/2 fruit or fruit combo,
    1/2 cup splenda
    1 teaspoon cinnamon
    1/2 of a lemon juice

    Mix 1 cup oatmeal and 2 tabs of butter (or smart balance type of butter)
    Crumble it up and scatter over fruit, sprinkle a little more splenda on top
    Bake@ 350* for about 30 minutes.

    My family loves this and in the winter for the holidays I double it up and use those pop and fresh butter milk bisquits instead of the oatmeal with a scope of good quality vanilla ice cream. But, for right now we get the lighter version using the oatmeal. enjoy!
