What's for Lunch?

  • Just wondering if anyone has any quick and healthy lunch ideas they want to share. We don't have much in the house right now, I usually make a nice meal for supper...just wanted to see if you have any quick and easy ideas for lunches
  • Nice tropical lunch: cut up some papayas and avocados and put it over a green salad. use light vinegar as dressing.
  • I'll be having some veggies, most likely cucumber and baby carrots, an apple, some rice cakes (can't decide between the caramel and cheddar ones), and some cheese. Pretty much a bunch of random cooking-free stuff from the fridge.
  • Hmm I actual came here to figure out the same thing.
  • I do a lot of wraps lately.. flat out wrap with boars head honey maple turkey and american cheese.. lettuce, tomato, pickles and 1 tbsp. full fat italian dressing. Yum-o. I also like just the turkey rolled up with the cheese with no wrap and some cut up fruit.
  • Ramen Noodles. I know, I know... not a good choice. But it sustains me. I make it by boiling the noodles and draining out all the liquid (and with it, hopefully, draining out some of the fat, too) and adding just a quarter or lesser of the spice packet, cutting down on the sodium. There's always a lot, anyway. Then I add some veggies. I do add that into my daily calorie intake so it's all good.
  • Today I had a whole wheat pita with a garlic/herb laughing cow cheese wedge, yellow and red peppers, and sliced cucumber on it. That and an apple and of course my diet coke Super tasty.

    I have started eating lighter lunches because I always want an afternoon snack no matter how much I eat at lunch.
  • Whole wheat/low carb/high protein La Tortilla Factory Rosemary wrap - fill with deli turkey or roast beef, a laughing cow wedge, and veggies. Roll and serve with fruit on the side...mmm.

    I apologize for my ignorance, but what is a "laughing cow wedge"?
  • I had egg salad (1 whole egg, 2 egg whites, 1 T lite mayo, 1t dijon mustard) over 2 cups of mixed greens....it was so yummy and filling and only about 180 calories....
  • Just a plain old turkey sammich on wheat with american cheese and a dab of mayo. I also had a serving of fat free pringles, sour cream and onion YUM.
  • Laughing Cow is a cheese spread. Their light versions are pretty reasonable in calories and tasty, too.

    I had a mix of leftovers, too: a salmon fillet, some wh-wh pasta and sauce, a salad with dressing.
