Southwest Chili with Noodles

  • Ingredients:

    2 (8 oz.) packages House Tofu Shirataki Noodle Shape
    2 tsp vegetable oil
    12 oz lean ground turkey breast
    1 package (1.25 oz) chili seasoning mix, low-sodium
    1 can (14.5 oz) Mexican spiced diced tomatoes, low-sodium or no added salt
    1 can (15.25 oz) corn kernels, no added salt

    To serve:
    1/2 cup chopped red onions
    1/2 cup shredded reduced-fat cheddar cheese
    4 Tbsp fat-free sour cream

    Preparation:

    Prepare noodles according to package directions below. Cut into 3- to 4-inch lengths. Set aside.
    In saucepan, heat oil, brown turkey with chili seasoning over medium high heat.
    Add tomatoes and corn, including liquids. Bring to a boil, cover and simmer 10 minutes.
    Stir in noodles, simmer 5 minutes.
    Serve with onions, cheese and sour cream in separate bowls.
