3 "Bean" Salad

  • I made this this weekend. Filling, pretty low calorie, and tasty as well. The "bean" is in quotes because I know that lentils aren't exactly a bean.

    1/2 cup dry black bean
    1/2 cup dry lentils
    1 package frozen green beans
    1 small red onion, small dice
    1 small green pepper, small dice
    4 cloves garlic, roasted
    1 1/2 lemons, juiced
    2 T seasoned rice wine vinegar
    1/2 tsp salt
    Splenda to taste, if desired.

    Soak and cook beans and lentils till done (the beans will take longer to cook). Set aside to cool. Thaw green beans, chops if too long. Cook briefly in boiling water if you want a very tender texture.

    Mash garlic with back of spoon in large mixing bowl. Add lemon, vinegar, salt and Splenda mix to taste. Add beans onion and green pepper. Mix and chill.

    This is the sort of thing I can eat alot of, but I don't have to feel guity when I do!

    Lentils are a legume, btw. They count as beans

    Green beans also count as a legume You are safe calling it a 3 Bean Salad or a 3 Legume Salad.

    Either way, it sounds pretty tasty.
