Hi KO.. Look at that ticker of yours!! U go girl They are fine for South beach.. I thought I saw some chicks talking about it on the Food /vegetarian forum.. I'm thinking of ordering them on line since I cant find them around here.

At only 20 calories per serving (40 for the whole bag), I'd really like to try them. I'm thinking of ordering them from lowcarbu.com because I can't find them locally.

I found some at Safeway, but I'm in CA. Try them first in asian-style dishes where you aren't expecting a "pasta-like" texture, and be sure to rinse and parboil well!

More and more of the grocery stores in my area are starting to carry the shirataki noodles. I really like them, but they can take some getting used to at first, as they have a gelatinous consistency. They're wonderful in chicken noodle soup and other brothy-type soups.

I have an odd question Do they expand in the water? or indeed in your stomach with my WLS That's a major concern! I can eat a little bit of pasta right now but Generally don't since the actual nutrients from it are not that great and it leaves me feeling sluggish

Someone who has eaten them probably would have a better answer for you, but they are "cold-packed," which means they've already been cooked and/or soaked in liquid. The noodles would be wet in the package, or at least a little damp from the liquid they were cooked or processed in. Certainly after simmering in pot of hot water, soup, or sauce they'd plump up as much as they're going to, but someone please confirm.

No, I don't think they expand or swell, KO. The first time you eat them, just eat a small amount, and see how they affect you. I don't think you'll have any problem with them, though.

One more Q since I actually got to whole foods and got them!! Are they Ph1 legal? THe only thing I'm not sure abuot is th yam flour

No, unfortunately, they are not allowed on Phase 1 because of the small amount of yam flour. Granted, it's only a small amount, but I would still wait until Phase 2 to start eating it.
