Roughly 2 cups of low fat cottage cheese... and cucumber slices. I utterly lack imagination when I pack lunches early in the morning!
Dinner, on the other hand, will be grilled chicken breasts, oven roasted red potatoes and salad followed by white chocolate raspberry creme brulee for dessert:
I make fat free sugar free white chocolate jello pudding and pour it (while still somewhat fluid) into four little ramekins over 6-10 fresh raspberries, then coat two with a layer of sugar (caution: Splenda burns) and heat them with a torch to carmelize the sugar. One box of pudding makes four ramekins- I cover the remaining two (without the sugar as it melts into the pudding) and add sugar and carmelize for the next night. I'll have to get back to you on the total points when I figure out how much sugar I add
