(Chay-oat-ay)My chef son brought home a fruit/veg/? thing that he bought at the Asian market by his school.
It was very crunchy and very good.
I've seen them for ages but I thought they were more squash like, or mushy.
They are very juice in a radish way, but tastes like a potato/radish/cucumber/pear, lol, sorry for vague description, but I think you have to try it for yourself.
Very good and I found out, very low cal!
1 humongous pear size is only around 35 cals for the whole thing!
You can cook it or eat it raw.
The skin is edible, but like a cucumber, don't eat too much of the skin.

(He also brought home a little Korean Melon, a little yellow squash looking melon, ever hear of them?)


My DH is kind of "obsessed" with them since he broke his sister's years ago. We picked this particular one up in Vancouver on our honeymoon.
Plus, I have a restricted medical diet that makes it difficult for me to get enough Vitamin C, but chayotes give me a large percentage of my daily requirements! Thanks so much for posting this.
