Southwestern Vegetarian Pie

    1 1/2 c. whole kernel corn
    8 green onions, chopped
    1 (15 oz) can black beans, rinsed under cold water and drained
    1/3 c. shredded reduced fat Cheddar cheese
    1/2 c. reduced fat baking mix
    1/2 c. low fat milk (I use fat
    free)
    1/2 c thick and chunky salsa
    2 eggs (I use 1 egg and 2 whites
    Thick and Chunky Salsa

    Heat oven 400 degrees Spray a 9 x 1 1/4" pie dish with cooking spray. In a medium bowl, gently combine the corn, drained beans, and onion. layer mixture in pie plate. Sprinkle with cheese. Lightly beat eggs, stir in milk, salsa, and baking mix using a whisk if necessary to combine well. pour into pie plate. Bake 35 - 40 minutes or until tip of knife inserted in center comes out clean. Cool on rack 5 minutes before cutting. Serve with salsa.
