Strawberry Spinach Salad with Feta Cheese and Balsamic Vinaigrette
Salad:
1 bag baby spinach
2 cups sliced fresh strawberries
1/2 cup crumbled LF feta or goat cheese
1/4 cup toasted pine nuts
Dressing:
1 TBSP balsamic vinegar
3 TBSP olive oil
1 TBSP chopped fresh basil
Salt & pepper to taste
Whisk vinegar and olive oil in small bowl. Add basil and season with salt and pepper. Gently toss with salad. Serve immediately. Serves 4.
This is delicious and a very pretty salad, too. I like to serve it with grilled chicken or salmon.
