chicken cranberry wraps

  • Chicken-Cranberry Wraps-1/2PFSSC

    Ingredients:
    6 (8 inch) tortillas
    1/2 (15 oz) can whole-berry cranberry sauce, lower-sugar as available
    2 tbsp spicy mustard
    2 tbsp crystallized ginger
    2 cups chopped cooked chicken breast
    3 green onions, thinly sliced
    2 tbsp chopped toasted pecans
    1 cup shredded lettuce

    Preparation:
    Heat tortillas according to package directions.
    Stir together cranberry sauce, mustard, and ginger. Spread mixture evenly over 1 side of each tortilla. Top with chicken, green onions, pecans, and lettuce; roll up.

    Makes: 6 wraps
    Serving size: 1 wrap

    I used a LaTortilla factory tortilla for 1 starch, but next time I think I will use a WW pita. I made the cranberry sauce and didn't use the ginger, nuts or green onions. It was pretty good. I think it would be good with leftover turkey too.
