This morning I tackled the fridge and sorted out the veggies. I made up four pounds of chopped veggies for the Girls. (Yes, they eat raw veggies!)
Here's what I have left...so silly for one person:
cabbage, spaghetti squash, 3 sweet potatoes, sweet dumpling squash, onions, celery, baby carrots, grown up carrots, English cuke, rutabaga, Chinese radish, baby bok choy, cauliflower, broccoli, green beans, 3 green peppers, 2 red peppers, grape tomatoes, parsley and cilantro!
Would anyone like to come over for a meal? These are all full packages as I used up the odds and sods for the Girls.
Ruth, You have got to be the Queen Bee of Vegetables- especially per capita!
Okay, this is from memory:
Fresh:
1 large container grape tomatoes
2 different types of salad mix
2 bell peppers
2 white onions
1 red onion
1 head of cauliflower
1 avacado - Wait, I threw that away last night
tupperware of olives
2 bunches of radishes
1 small tomato
Frozen:
1 bag brocoli
1 bag mixed vegies
1 bag santa fe style mixed vegies
1 bag green beans
1 Huge jar of whole dill pickles (that counts, right?)
I have a whole ton of canned stuff (that doesn't count, huh?)
I have a tiny fridge so it does look like there's more in there
** That's for 2 of us - me & one hulky hunk of a man - my hunny! **
Ruth, can I come over and borrow some of your veggies??? (Just kidding)
I am desperately short of vegetables, in fact I will probably have to hit the grocery store after I get out of school. I think I may have a couple of bags of frozen vegetables (maybe brussels sprouts and spinach) but that's about it...
Hey, thanks, ladies! I was just sitting here trying to come up with some veggie sides that I hadn't used in a while and thought I'd drop in to see if I couldn't scavenge some ideas here.
I am not at home right now, but if memory serves, my veggie inventory looks about like this:

canned green beans (regular and low-sodium...trying to cut out the sodium from my diet now but haven't used up the old cans yet)

Gotta run to the grocery store tonight, though, cuz the asparagus I had went all mushy on me. Grr...

I have the horrible habit of buying veggies that 'just look so good' (who would've guessed I'd EVER feel that way about veggies???) even though my whole week's planned and I have no time to cook them. Ugh. I was good today and bypassed the 2 lb container of haricots verts at Sam's even though I was drooling. I'll plan them into next week's menu and get them.
Right now, everything in the fridge is either going to us or the bunnies (our veggie eaters here):
