I know beets are not on Phase I protocol, but I have some fresh out the garden beets... I cooked the beets for my husband, but want to know if I can boil up the greens and eat them like spinach?

Beet greens aren't something I'm very familiar with, but I saw no one else had responded, and I was curious... so I checked the nutritional values for beet greens at http://nutritiondata.self.com/facts/...roducts/2353/2.

I was surprised to see that 1 cup of beet greens has 39 cals; 0 fat; 8g carbs; 4g fiber; 1g sugar; and 4g protein, giving them very close to the same nutritional values as 1 cup of green beans. http://nutritiondata.self.com/facts/...roducts/2341/2 You can see for yourself that their fat, carbs, and fiber are the same - they have 1g less sugar and 2g more protein/cup than green beans.

So I'd say go ahead, but to be safe treat them as an occasional vegetable, as we do green beans.

And to be doubly sure, check with your coach.
