So today my butcher gave me a phenomenal idea. He was out of the 96% lean ground beef I normally buy.
He suggested I buy an eye of round roast and let him grind it. He trimmed all visible fat and sent it through the grinder. He said trimmed in such a way (according to his book) it's about 30 calories an ounce. He even portioned it into 4oz servings for me
