Default Trouble thinking of dinners that...

Hey y'all! I hope you're having a great day! I need some advice. My husband works construction and I am having a hard time coming up with dinners that give him enough energy to keep his strength up but also won't destroy my diet. Please help with any suggestions you might have!!! Thank you!!

I'm a huge brown rice fan. I just bought a rice cooker & I use 2-3 times a week. Add 2-3 chicken Bouillon cubes, 2 cups rice & 4-6 cups water. My husband, also in construction, loved it. I make a bunch to last me a few days and then add different things to it for lunch or dinner like black or refried beans, asparagus, roasted chicken, broccoli, zucchini etc...

That's a reason for a large part of my weight problem! My husband is 6'2" and weighed 135 when I met him. He's at a much healthier 165 now. My son is also in 99th percentile for height, and about the 80th for weight. And growing incredibly fast! So fixing them what they need, without ruining my efforts is a challenge. I fix a lot of lean meats, with veggies and their fatty, high carb sides (potatoes au gratin, mac and cheese, butter noodles). If I really want the side, I'll have two spoonfuls - and I mean tablespoons, not serving spoons! Generally, I take the meat and the veggies and serve them over a large spinach salad for myself. There are always leftovers on their side dishes now, which actually means less cooking for me later.

Oh - and when we have spaghetti or pasta dishes, I just make myself a big serving of squash and serve the sauce over that. Nutritious and filling!

Lean proteins and healthy carbs and fats. Check out the mediterranean diet forum on here and google mediterranean diet recipes. They would be awesome for your needs.

Make extra servings for him.

Make sauces and gravy to put on his stuff and not yours.

Serve him bread with olive oil or butter with his dinner.
