I just made a great low carb breakfast, I was sooooooooooo hungry! I walked 10 miles yesterday (went to an expo) and I think it kicked my appetite into overdrive!
I made a tofu scramble with asparagus, arugula, shallot, red onion, garlic, pine nuts, miso and a lot of fresh herbs. I chopped a few slices of pickled hot carrots and ate that with it too. Delicious!
I am going to get acupuncture this morning (still getting over the illness) and then it's off to the gym for treadmill and yoga time.
