Actually, it's early afternoon, but I slept late and have been writing checks for bills. I bet they're going to think I was drunk when I wrote them!

It stormed here most of the night, and the electricity went out once, but nothing real severe. It rained most of the morning too, and it's suppose to storm every day this week. I hope it's just the garden variety thunderstorms on Friday, because I have to travel a ways to the ortho surgeon that day.
Slept pretty good last night. Didn't go to bed until 1:30 AM and slept till after 8 AM. Took a pain pill before bed. It's sore today, but as long as I don't use it, I can tolerate the soreness.
My beautiful daughter-in-law is going to go to the store and pick up some healthy foods that are easy to make, one-handed. She's such a lovey. She came up again last night and checked to see if I had any dishes to do or needed anything.
I can't get used to not doing what I want when I want.

These muffins are just as delicious and moist as regular muffins! They'll be gone before they have time to cool. Low-fat, healthy and yummy, imagine that.

Makes: 12 muffins
Ingredients
1 1/2 cups wheat bran
1 cup nonfat milk
1/2 cup unsweetened applesauce
1 egg
2/3 cup brown sugar
1/2 teaspoon vanilla extract
1/2 cup all-purpose flour
1/2 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup blueberries
Directions
1. Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or use paper muffin liners. Mix together wheat bran and milk, and let stand for 10 minutes.
2. In a large bowl, mix together applesauce, egg, brown sugar, and vanilla. Beat in bran mixture. Sift together all-purpose flour, whole wheat flour, baking soda, baking powder, and salt. Stir into bran mixture until just blended. Fold in blueberries. Scoop into muffin cups.
3. Bake in preheated oven for 15 to 20 minutes, or until tops spring back when lightly tapped.
