  • Joseph's Whole Whet Pita, 2 slices Thin 'N Trim baked Ham, 1 slice light finlandia swiss cheese, and mustard. 100 cal pack of Blue Diamond Almonds for a side.
  • I made a bunch of calzones last night and these would be the perfect lunch to take to work. I make the crust whole wheat and stuff it with all kinds of veggies, spaghetti sauce and a small sprinkle of cheese. my veggies were zucchini, yellow squash, onions, red bell pepper. Oh and I threw in some low cal turkey pepperoni. mmmm! All I need is a piece of fruit on the side and the meal is complete.
  • Whenever I'm home for lunch and not in class I make my "garbage salad," which includes a couple handfuls of my prechopped veggie mix (chop a ton on Sunday and put in 1 or 2 huge ziplocs in the fridge-- broccoli, cauliflower, bell peppers, celery, carrots...anything that will last pretty well), mushrooms (bought presliced) and grape tomatoes, plus banana peppers and my weird "dressing" of a spoonful of either rf ranch dressing OR tostitos salsa con queso (that cheesy sauce-- about 20 cals per Tbsp. I think), plus a few spoonfuls of salsa and a spoonful of SF BBQ sauce...stay with me!...mix it all together with, I almost forgot, about 1/2 cup of my black bean/chickpea/corn mix (just cans of each dumped in a bowl and mixed together on Sunday when I chop my veggies...stays good for days). I top the whole huuuuge plateful of salad with a few baked tortilla chips crushed up in my hands and it's deeeelish!

    I'm someone who prefers lots of low cal food over just a little high cal food-- it's all about volume! It's so filling but doesn't give me carb coma in the afternoon when I have to study for my next med school exam...
