No one seems to be posting here, how come?
Here is the pasta recipe I promised. I don't have any nutritional facts for it so whoever has the time/inclination to figure it out, perhaps you can let me know...
serves 4
8 ounces ww pasta (I used Ronzoni ww blend)
salt, pepper
1/2 olive oil (I did not use the whole 1/2 cup, I felt it was too much, but
used most of it
2 garlic cloves
1 onion, quartered and sliced
3 large flat mushrooms, sliced (don't know what flat is... didn't use)
5 c fresh spinach leaves
2 TBSP pine nute
1/3 dry white wine
parmesan cheese shavings to garnish
Cook pasta according to package directions - drain
Meanwhile heat the oil in a large pan. Add the garlic, onion, and saute for 1 minute
Add the sliced mushrooms and cook for 2 minutes, stirring occasionally
Add the spinach and cook 4-5 minutes until spinach is wilted
Stir in pine nuts and wine, season with salt, pepper and cook for 1 more minute
toss with pasta and garnish with parmesan cheese.
I really liked this a lot.. hope whoever tries it does too
