  • I marinate slices cucumbers in vinegar, gives them a whole other taste.
  • My automatic response to cucumber is EUGH as well. I used to get given raw slices of it by my stepmum for lunch when I was a kid and I hated it. I still pick it out of stuff now. Never thought about eating it cooked though - that could be worth trying. But raw... definitely not for me.

  • My favorite way to eat cucumbers is to peel them and then slice them into long spears (like a pickle) and then toss them in sambal oleek (the bright red chili and garlic paste with the rooster on it) and a little bit of low sodium soy sauce and a little brown sugar. This can be served cold out of the fridge, or room temperature
  • All of the above...I grow my own to make pickles and for my English hubs (he loves hem just about any way).

    Another dish is farm stand gazpacho. You can google different recipes but most are same. I like the ones that keep half of the veggies chopped and you purée half. This "soup" has so much flavor and no cooking...you eat it chilled. I could eat it every day for lunch if my tomatoes ever ripen up. I'm a teacher and plan on making big batches just for that when classes start up next month.
